Opened in April 2014 a block from the White House, GCDC is DC's first grilled cheese bar, where customers can chose from several original creations on their menu, or build their own. Started by a DC lawyer and his son, GCDC has been featured on the Travel Channel and the Food Network, and features locally-sourced ingredients from top DC-area producers.

A Business that Stands Out1. GCDC is a creative grilled cheese restaurant that has a variety of innovative and diverse grilled cheese options. The location is quite popular in the Washington DC area. The restaurant has been featured on the Food Network and the Cooking Channel. The restaurant builds upon the simplicity of a childhood classic with creative variations such as the Maine Lobster which features “a four cheddar blend and aged gouda with lobster layered in lemon aioli and chives on buttered white bread.”
2. The business really stands out due to the restaurants history. To our luck, we got the opportunity to speak with the owner of GCDC. The owner began by telling us that his idea sparked when he was a lawyer in California. He was in a heated trial where all the lawyers were angry at each other. However, the judge allowed for a recess so that that everyone could go get something to eat. However, the only place open to eat was a stand that sold grilled cheese paninis. The lawyers had the opportunity to forget about the trial, set their differences aside, and politely interact with one and other. That experience was the defining moment that ignited Bruce’s, the owner’s, idea for a grilled cheese restaurant. He bragged about his idea for two years to his colleagues, yet did not take any action. He realized that after boasting for so long, he needed to act on his business model. He actions led to the creation of GCDC after he moved to Washington DC. 3. GCDC creates the bar atmosphere in order to spark conversation, just like the day of the trial in California. 4. Bruce, the owner, was helping out his staff by bussing tables, engaging with the customers, and motivating his staff members. By doing this, Bruce is able to create a more welcoming, personal environment in the restaurant which attracts customers. 5. Orders are served on metal trays instead of plates. This creates a more homely atmosphere as it reminds customers of their memories making grilled cheeses with their families at home. |
